Eve's signature bejgli with a twist

Every year, making bejgli is more than just baking, it’s my little ritual, my way of finding peace in chaos. Even during Christmas time, when deadlines pile up and there’s so much to do, I find joy in baking. The kitchen becomes my calm corner, my place to slow down and create something amazing.


I grew up loving the way my family made bejgli, but I wanted to create something even better: a bejgli that tells a story, that honors tradition but also can be extra.


This recipe from Apróséf has been my base for years, and I’m so grateful for it. But over time, I wanted to create something extra… something juicy, spicy, and full of surprises, something that is traditional yet uniquely mine.


But how i made it mine?

I soak dried plums, raisins, and dried apricots overnight in a generous amount of good-quality rum, and to be honest I add a little orange liqueur too. In the morning, I blend them into a rich, flavorful jam like cream. This mixture goes into all my rolls, into the poppy seed and walnut bejgli, which I also enrich with little of gingerbread spice mix. These additions make every bite warm, aromatic, and comforting.


And for the dough...

I love mixing a hint of ground cardamom and nutmeg into the dough, making it wonderfully fragrant and full of warm aroma.



Baking has always been my way of spreading joy, one year, I even made little cookie boxes for friends and, last minute, printed a sticker saying “Eve’s Little Bakery” at home. (Of course I did, i am a graphic designer) That tiny touch made everything feel so special. It’s these little details, these personal touches, that make baking more than just food.
